"RAW" VIRGIN COCONUT OIL, ENZYMES AND HEAT You may have read that coconut oil has to be "raw" and contain enzymes to be truly beneficial to health. This is just not true! It's not even logical. Think about it --- raw food containing enzymes deteriorates and spoils --- so would coconut oil. Coconut oil that contains any appreciable amount of enzymes would have a very short shelf life. The job of enzymes is to break down and start the process of decomposition and enzymes in coconut oil would cause it to do exactly that - decompose. "If you don't heat the oil high enough to destroy the enzymes and then filter them off, plus filter the oil, the oil becomes unstable and tastes terrible." Ray Peat, Ph.D
If you have purchased "raw" coconut oil that contains enzymes then you'll find that it starts to very quickly smell bad in the container. Coconut oil is not harmed by heating or it wouldn't be the safest and healthiest oil to cook with. As the Raw Food Movement becomes more and more mainstream we'd like to add that virgin coconut oil cannot be judged the same way as other foods. It is different --- and several of our "raw food" customers have called to confirm that the Movement is beginning to recognise this.
